Strawberry Rhubarb Pie

Ingredients

2 1/2 C chopped Red Rhubarb
2 1/2 C Strawberries (whole)
1 1/2 C Sugar
3 T tapioca (minute)
1 T flour
1/2 tsp lemon zest
1/2 tsp lemon juice
1/2 tsp ground cinnamon
1 tsp vanilla extract
3 T butter cubed small
1 beaten egg white + 1 tsp water
  Large Granule Sugar
  extra fine sugar mixed with some cinnamon

Preparation

  1. Mix the strawberries, rhubarb, sugar, tapioca, flour, zest and juice of lemon, cinnamon, vanilla in a larg bowl and pour into pie crust.
  2. Dot top of filling with butter
  3. brush edges of pie crust with egg white wash
  4. roll out top pie crust and place on top of pie filling
  5. crimp pie crust edges
  6. cut slices in top of pie
  7. sprinkle fine sugar mix
  8. sprinkle large granule sugar
  9. Bake for 10 minutes on 400 degrees F
  10. Bake for 45 - 50 minutes on 350 degrees F
  11. Serve witih vanilla ice cream.
